The Albesi or “tajarin” are a long egg pasta format originally typical of the Langhe and Monferrato area, and today extended to the entire Piedmont region.
They are born as a dish prepared at home for the feast days and their right typical accompaniment is with truffles or with a sauce of chicken livers or Piedmontese ragu

Pastificio Alfieri follows the traditional recipes that have been transmitted in the various generations, and are typical of the Langhe, Alba and Roero areas. Respect for tradition in the preparation of Piedmontese egg pasta is combined with the search for quality and careful choice of raw materials.
